I have a slight issue with the iBlogPro theme. While everything is working great, the top menu wants to use PAGES as the navigation structure. Since my site is mostly blog content, I've used POSTS for years, and I have a hierarchy/structure of categories built for my posts. Is there any way of changing up the top nav to use the post category structure instead?

Now that you have complete control over the menus in the newest WordPress this is now very simple.

Simply go to: Appearance > Menus and you can create a menu from scratch however you wish.
