I'm sure this is right infront of my face, but can someone point me in the right direction for changing out the word "comment/comments" for something else?

Ahh, different site. I actually have no idea how I did that on my site (I remember doing it through the pagelines backend at one point in time).

Looking at the source code for that site its pulling those changes through from discus, in appearance>settings> then the options under the comment count link. Are you using discus on the new site? This would probably be the easiest option.
As far as I'm aware there's nothing built into Pagelines that would allow you change this, I would imagine to it through the Pagelines admin area it would have to use a Pagelines filter from
