The names "Template-1", "Template-2" are not descriptive. Is there a way to rename them or create a template with a unique name like "Home Page Only" or perhaps "Product Page"

There isn't a way to go in and edit the Dashboard settings for these template names. To alleviate the issue with them not being descriptive, it helps to keep an updated list of which template name is for which type of page.
