How does one edit the stuff right at the bottom of the page, below the widgetised footers? It picks up the whole of the welcome text on the top of the side-bar, which looks rather odd.

If you can please provide a link and a screenshot of exactly what you're referring to.

You'd like to edit: Categories, Archives, Recent Comments, Pages, Stay In Touch, More? In what way would you like to edit them?
Thanks, Bryan

I would like to remove "more" or just the stuff that is currently listed under more.

Try adding this to your Custom CSS and see if that is satisfactory:

Woops, that takes the welcome message out of the sidebar as well, where I want it. I just don't want it repeated in the footer.
All the best,
Duncan

Duncan,
You have some custom stuff in there now?
If you want to swap out the footer content just put whatever widgets you choose into the footer columns category in the widgets menu. (takes 5)
