I am having a hard time getting line breaks and spacing to work properly. I can add br breaks or paragraph tags with the empty space code   in it, but then on the WYSIWYG editor comes in it strips it all. Is this an issue with the theme or wordpress? It seems like it shouldn't be this hard to get a simple line break...

This is a common wordpress problem. They have plugins to help, but I agree its annoying.

Can you let me know some of the plugins we could look at?

TinyMCE Advanced will provide this, a few extra buttons in the toolbar of the editor as well.
